12 servings:
3 T. oil
3 cups uncooked rice
6 cups water
6 chicken bullion cubes
3 small cans petite diced tomato Peeled
1 onion diced fine
6 cloves garlic - minced
1 to 2 tsp. each of cumin, salt, & 1/2 t. pepper
1 small can of diced green chili's (I use mild)
1 small can of diced green chili's (I use mild)
Saute rice in very hot oil for a few minutes. Add onion and garlic and saute 2 minutes. Add rest of ingredients and simmer, covered, for 15-18 minutes. Remove from heat and let stand covered for 5-10 minutes. Fluff with fork and serve.
