Soup Delight


Soup Delight: Low Cal Minestrone Soup

Large can Tomato-Vegetable Juice (46 oz)
Large can water
5 cubes (or 5 tsp) beef bouillon
4 cups shredded cabbage
4 cups sliced celery (I don’t always use that much
celery)
2 cups sliced zucchini
2 cans green beans (drained)
Mushrooms (as desired)
1/4 cup dried onion bits
1 tsp Italian seasoning (or to taste)
Salt, pepper as desired (I don’t use pepper)

Bring to a boil and simmer about 2 hours.
