Rotten Banana Bread/Muffins



Rotten Banana Bread
Why Rotten? Cause it just tastes better the more Rotten your bananas are!

1/2 C. Butter or margarine softened
1 1/4 C. Sugar (or 3/4 C. Sugar and 1/2 Cup unsweetened Applesauce)
2 eggs
3 mooshy bananas ( I have used 4 if they are small)
2 C. Unbleached Flour
1 t. Cinnamon
1 t. baking soda
pinch of salt

Cream butter and sugar till smooth. Add eggs and bananas mix well. I do NOT pulverize my bananas, I add
them whole and mix up with the rest hoping for some lovely chunks in the done product!
Add remaining ingredients.
Bake at 350 40 to 50 min checking after 40 min. When I make one big loaf it takes longer. When I do the 4 small ones its done at just at 40 min.

For Muffins:
Bake 15 to 17 min for small muffins (As shown)
up to 20 min for regular muffins. check for doneness!
Sprinkle top with cinnamon sugar before baking-YUM

Macaroni Grill Focaccia

I got this in an email today. I am going to try making this recipe this week! I will let you know how it goes, and maybe get a picture!

Here is a copycat recipe for Macaroni Grill Focaccia. Enjoy!
This turned out amazing!

Ingredients

* 9 tablespoons olive oil (divided use)
* 3 cups unsifted all-purpose flour
* 3/4 cup unsifted semolina flour
* 1/2 teaspoon salt (divided)
* 1 1/2 tablespoons fast-rising active dry yeast
* 1 1/2 cups hot milk (between 120 and 130 degrees)
* 1 tablespoon fresh rosemary leaf

Directions

1. Pour a scant tablespoon of the olive oil into a 9"-square
cake pan; spread evenly to cover bottom and sides.
2. Place all-purpose flour, semolina flour, 2 tablespoons of the
olive oil, 1/4 teaspoon of the salt and all of the yeast in the
bowl of a mixer fitted with a dough hook. (The mixing can be done
by hand as well.) Blend ingredients on medium speed.
4. Reduce speed to low and slowly add hot milk.
5. Raise the speed to medium and continue mixing for 5 minutes
(knead about 8 to 10 minutes by hand).
7. Sprinkle bottom of cake pan with a little flour.
8. Remove dough from bowl and spread out evenly in pan.
9. Cover with a towel and let rest for 30 minutes.
10. Preheat oven to 400 degrees.
11. Remove towel.
12. Brush dough with 1 to 2 tablespoons of the olive oil.
13. Sprinkle top with additional salt and rosemary.
14. Bake for 20 minutes.Remove from oven and drizzle with
remaining oil.
